Chocolate fondants

So as we hit the cold winter the mind ponders thoughts of warm, desperate thoughts of beaches and warm fires. But for me my thoughts go to chocolate fondants hot rich and goey, so upon forgetting to bring a recipe 3 days in a row I head to any chefs greatest inspiration google.
I glance at a few variations of fondant recipes, cultivate my own ratios and away we go,
A little research with the floor staff
They didn't want pistachio and roast banana ice cream nor did the want a simple berry compote.
Raspberrys were the consensus but seeing as we are in winter strawberrys had to do, a little bit of chocolate soil some nitro churned vanilla ice cream and a winters day is now complete with my chocolate fondant
